Empek Empek


 empek2 kue one of the famous food from Palembang West Sumatra area,serve with special sauce consisting of melaka sugar, chili, garlic, dried shrimp and vinegar, a bit look like fish cake here usually they call " cuko sos " but I made the fake version ones. Originally 50% from ingredient is from fish meat but here I use fish powder or dried anchovies as a substitute for fish meat 

Ingredient :
- 250 ml water
- 125 gr all-purpose flour
- 250 gr tapioca flour 
- 200 gr dried anchovies ( wash with hot water and rinse ) 
- 2 tbsp / anchovies / chiken stok powder
- 2 egg ( lightly beaten )
- 3 cloves garlic

- 4 egg ( for filling ). 

Ingredient for coko sos :
-5 cloves garlic
- 400 ml water
- 300 gr malacca sugar
- 4 tbsp sugar
- 9 chili padi 
- 2 tbsp dried shrimp 
Metode :
To make dough 
- put water and chicken powder/ anchovies to the pan, bring to a boil, reduce the heat, put flour, stirring until well blended & smooth dough,leave to cool. 
- put dough and egg to the food processor, add tapioca starch, add dried anchovies and process until smooth dough, remove from food processor,
Knead and add a bit tapioca flour if necessary.
- divided dough into four, form it into ball, keep aside. 
- take one dough, hole in the center with yr thump and shape it like a bowl, ( please make sure the hole size a enough with the 1 egg ) break 1 egg, fill in to the hole, press and cover the hole and seal. 
- put dough in to the boiling water, boiled until floating about 20 minute, leave to cool while preparing oil for frying, fry dough until golden brown, continue fry till finished, and ready to serve in with cuko sos 

To make cuko sos : 
-roughly chop the garlic, and chili, transfer to food processor, and add dried shrimp, process till smooth paste.

______Empek Empek Dos Tampa Ikan_____

Karna aku alergi and nggak suka sama ikan2 an kayaknya resep ini cocok buat aku dech, so jadilah empek2 Tampa ikan aka nyonya liem. Rasanya empuk & kenyal2, nggak kalah sama empek2 yg asli dr ikan. 

Bahan : 
- 250 ml air 
- 125 gr terigu serbaguna
- 250 gr tepung tapioca 
- 2 sdm kaldu bubuk Teri 
- 2 butir telur ( kocok lepas )
- 4 bji telur ( Untuk isi ) 
- 3 suing bawang putih 

Bahan kuah cuko :

- 400 ml air 
- 300 gr gula Merah 
- 4 sdm gula
- 4 suing bawang putih ( haluskan )
- 9 bji cabe rawit merah ( haluskan )
- 1 sdm ebi sangrai ( haluskan ) 

Cara :
- rebus air dan kaldu sampai larut, kecil kan api, masukan terigu sedikit demi sedkit sambil diaduk aduk sampai rata dan Kalis, dinginkan.
- masukan adonan tepung tadi Ke food prosesor tambahkah kocokan telur, bawang putih giling sampai rata, tambahkah tapioca giling lagi sampai rata dan kalis, eleni tampahkan tapioca jika di rasa Belum kalis. 
- bagi adonan Jadi empat, bulat2 kan lubangi di tengahnya sampai membentuk mangkuk dan isi dg telur tutup lubangnya rebus di atas air yg mendidih selama kurlep 25 menit, dinginkan goreng sampai kering, siap di hidangkan dg kuah cuko.

Cara membuat kuah cuko :
Rebus semua bahan sampai larut, saring buang kotorangnya, siap di siramkan Ke atas empaek2, selamat mencoba
